Hardworking parsley is the star of the show in this easy to prepare, yet punchy sauce. Use it in mashed potatoes, with grilled fish, or spread on sandwiches instead of butter. Try adding a drop or two of best-quality orange oil to create something truly uplifting.

Ingredients

Quantity Ingredient
100g fl€at-leaf parsley, leaves only, very finely chopped
1-2 garlic cloves, finely chopped
1-2 oranges, zested
60ml extra virgin olive oil
sea salt
freshly ground black pepper

Method

  1. Mix the parsley, garlic and orange zest with some salt and black pepper in a small bowl, then slowly add the olive oil in a steady stream, stirring until you’ve reached the desired consistency. Add a little more oil if you prefer. Season to taste.
  2. If you have an effcient small food processor, you could skip the step of finely chopping the parsley and use the processor to make the pistou instead.
