The Pick-me-up

Ingredients

Quantity Ingredient
250ml strong rooibos tea, cooled
1 teaspoon chia seeds
2 large dried figs, roughly chopped
1 large very ripe banana, cut or broken into chunks
1/2 teaspoon good-quality vanilla extract
large handful lamb’s lettuce
150g frozen blueberries
1 lime, juiced

Method

  1. Prepare the tea the night before.
  2. Pour the cooled tea into the blender and add the chia seeds. Stir a few times while you get the rest of your ingredients together.
  3. Now add everything else, including the blueberries, and blend until smooth.

Ultimate green

Ingredients

Quantity Ingredient
1 lemon
375ml coconut water, preferably raw
1cm piece of fresh ginger, peeled and roughly chopped
handful almonds, soaked overnight, or for at least 6 hours, and rinsed
big handful kale, thick stalks discarded, leaves roughly chopped or torn
1 teaspoon green powder of your choice
1 ripe medium banana, cut or broken into chunks
200-220g frozen fruit

Method

  1. Cut the lemon in half then cut a thick slice of one half. Chop this up roughly and place in a blender. Squeeze the juice from the remaining lemon halves and add, together with the coconut water, ginger and almonds, to the blender. Blend until smooth.
  2. Add the rest of the ingredients and blend until smooth and creamy. If your blender allows for the use of a tamper, it is a good idea to press the frozen fruits down into the blade to avoid uneven blending.

Pumpkin pie

Ingredients

Quantity Ingredient
1 small orange, zested
250ml freshly squeezed orange, juiced
1/2 small dolce verde romaine lettuce heart, trimmed and roughly chopped
2 pitted large medjool dates
80g cooked butternut squash, or pumpkin or sweet potato
1 tablespoon peanut butter
large pinch ground cinnamon
Few pinches freshly grated nutmeg
handful ice cubes

Method

  1. Blend the orange zest, juice, lettuce and dates until smooth. Add the rest of the ingredients, except the ice cubes, and blend until smooth.
  2. Add the ice and blend one last time until smooth.
