renowned for their medicinal properties and should be available in select healthfood stores or ethnic grocers. I always have different infusion blends on the shelf to offer my guests, be it for their relaxing, immune-boosting or energising properties.

Ingredients

Quantity Ingredient
15g dried nettle leaves
15g dried dandelion leaves
10g dried peppermint leaves
2 tablespoons fennel seeds, crushed with pestle
mortar or partially ground in a spice grinder
5g dried red rose petals

Method

  1. Mix all the ingredients together well and store in an airtight container.
  2. To make a single serving of the infusion, put 1 heaped tablespoon of the loose leaf tea in a teapot and pour 250–300ml boiling water over. Allow to steep for 2–3 minutes, then pour through a strainer to enjoy.
