Five-spice powder is well known and highly valued across China. It usually contains star anise, cassia (or cinnamon), cloves, fennel, and Sichuan pepper in equal parts. Optionally, ginger, galangal, black cardamom or even liquorice may be added. Ideally the spices should be kept whole and then ground just before usage, so do not make large batches.

Ingredients

Quantity Ingredient
1 teaspoon fennel seeds
1 teaspoon szechuan peppercorns
1 teaspoon ground star anise
or 2 whole star anise
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Method

  1. Heat a small, heavy-bottomed frying pan over a medium heat and dry-roast the fennel seeds and Szechuan peppercorns for a couple of minutes, stirring with a wooden spoon or spatula. Set aside to cool.
  2. Once cooled, grind the fennel, Szechuan pepper and star anise (if using whole) in a spice or co ee grinder, or a high-speed blender, until powdered.
  3. Mix with the rest of the ingredients and store in an airtight container for up to a few months.
