Ingredients

Quantity Ingredient
200g ground almonds
200g icing sugar, plus extra for dusting
2 tablespoons liquid glucose
50ml water, boiled
1/2 teaspoon almond extract
a selection food colourings

Method

  1. Place the ground almonds and icing sugar in a food processor and pulse for a few seconds. Add the liquid glucose, boiled water and almond extract and continue to pulse until the mixture comes together.
  2. Lightly dust the work surface with icing sugar and knead the marzipan until smooth and pliable.
  3. The marzipan is now ready to use for covering fruitcakes and can be coloured and made into fruit shapes etc. Store in an airtight container for 3–4 weeks.
