Method

  1. Melt and temper the chocolate you want to use for dipping. To dip and coat set candies or set ganache fillings into chocolate, use chocolate dipping forks.
  2. Submerge the candy with a dipping fork into the tempered chocolate.
  3. Place the fork underneath the candy and lift it out of the chocolate. Move the chocolate-coated candy up and down to remove any excess chocolate around it.
  4. Using another fork, scrape the bottom of the lifted chocolate.
  5. Gently place the chocolate onto a lined baking tray at an angle by sliding the fork off the chocolate.
  6. Repeat this with all the candies or ganache fillings and decorate as desired, then leave to set in a cool place.
