My mother speaks fondly of this drink, which her mother would often prepare for her eight children. The bright orange flesh was scraped into long elegant threads, which seemed to dance in the clear glass, and a little sugar and water were added to extend the melon’s refreshing juice. If the flesh is too soft, it can be difficult to scrape, so choose perfectly ripe fruit.

Ingredients

Quantity Ingredient
1 rockmelon, (about 1.2 kg)
55g caster sugar
500ml chilled water
2 cups ice cubes

Method

  1. To prepare the rockmelon, cut the melon in half, scoop out the seeds and place them in a sieve set over a bowl. Using a spoon, press on the seeds to extract as much liquid as possible, then discard the seeds. Using a melon grater or fork, scrape the melon into long strands (tendrils) and place in a large jug or bowl.
  2. Add the extracted juice and sugar to the jug with the melon. Pour in the chilled water and stir gently until the sugar dissolves.
  3. Divide the ice among four tall glasses, then pour over the melon drink. Serve immediately.
