When my mother was growing up, avocados were in thick supply; friends and relatives with thriving trees kindly dropped off baskets loaded with ripe fruit. My lola put them to work in refreshing drinks, which she served ‘on the rocks’.

In the Philippines, avocados are served in desserts, such as ice cream, or sweet beverages, like this creamy drink. In my lola’s version, avocado was simply mashed, but a smooth blended finish is more appealing if you’re not accustomed to avocados in sweets. Stand for a few minutes before serving; the melted ice somehow brings it all together.

Ingredients

Quantity Ingredient
2 ripe avocados, stones removed and flesh scooped
500ml full-cream milk
150g caster sugar
2 cups ice cubes

Method

  1. Place the avocado, milk and sugar in a blender and blend until just combined (it’s nice to have a few small chunks of avocado). Divide among four tall glasses. Add ice, stand for a few minutes for the ice to melt slightly, then serve.
