Ingredients

Quantity Ingredient
1 slice rye bread
10g salted butter
1 egg
1/2 teaspoon extra virgin olive oil
75g smoked mackerel
2 radishes, thinly sliced
1 teaspoon chopped thyme
sea salt
freshly ground black pepper

Method

  1. Butter the rye bread. Beat the egg with some salt and pepper and scramble in a small pan with the olive oil. Place the scrambled egg on the buttered bread, divide the mackerel into 2 pieces and place over the egg. Add the radishes to the top, decorate with thyme and sprinkle with pepper to serve.
