Raw vegetables are healthy and tasty, and some root vegetables are quite inexpensive, so they make great salads when lettuce is expensive and tastes of nothing. I used to have a salad like this in my lunchbox in the 1970s, and I was mortified, as my classmates had rye bread with salami. That was too traditional for my hippie parents, so I told my classmates that I had a rare stomach condition and had to eat this salad. Now I am thankful I grew up on such a diverse diet.

Ingredients

Quantity Ingredient
400g celeriac
400g apples
1 tablespoon mustard seeds
2 tablespoons nigella seeds
1 tablespoon apple cider vinegar
1 tablepsoon honey
sea salt
black pepper

Method

  1. Peel and finely grate the celeriac and finely grate the apples with their skin on, leaving just the core out.
  2. Toast the mustard seeds briefly in a dry frying pan. Mix everything together in big mixing bowl, with salt and pepper to taste. Serve right away, because it starts browning quite fast.
