Chicory (endive) is called Christmas salad in Danish. We never really ate it growing up, so for me it stayed a Christmas speciality until I travelled to Italy and ate it cooked. It was a revelation. This is my modern take on my family’s Waldorf salad recipe.

Ingredients

Quantity Ingredient
2 chicory
2 pears
300g green grapes
1 celery stalk
50g walnut halves

For the dressing

Quantity Ingredient
1 tabespoon dijon mustard
1 teaspoon honey
2 tablespoons apple cider vinegar
2 tablespoons walnut oil
sea salt
black pepper

Method

  1. Slice the chicory (endive) and pears and place in a big bowl. Cut the grapes in half and remove the seeds if necessary. Thinly slice the celery. Toast the walnut halves in a dry frying pan for a few minutes, then chop and allow to cool.
  2. Put all the salad ingredients into a mixing bowl.
  3. To make the dressing, whisk the mustard, honey and vinegar together, then gradually add the oil to emulsify, and season with salt and pepper. Mix in the salad just before serving.
