It’s a very interesting phenomenon these days that raw bars are regarded as this new thing in all the drive for vegan, gluten-free food. It will probably be no surprise to anyone to hear that I do not really buy into all these ideas about living by strange and arbitrary rules. Food for me is all about joy, history and culture. In the 1970s we ate a lot of weird things because it was the fashion in hippie culture. I experimented a lot with making candy bars with dried fruit and have loved raw bars for years.

Ingredients

Quantity Ingredient
140g almonds, skin on
120g raisins
275g dates, stoned
50g coconut oil
50g cacao powder
50ml freshly squeezed orange juice
1/2 teaspoon pure vanilla powder or natural vanilla extract
1 teaspoon ground cinnamon
100g desiccated coconut, to coat

Method

  1. Grind the almonds to a powder in a food processor.
  2. Add all the ingredients except the coconut to a food processor and process to a smooth paste. Remove from the processor and form into small squares by hand. You should get about 30 bars. Roll in the desiccated (shredded) coconut to serve. They will keep in the refrigerator for 2–3 weeks.
