When I was a child, my siblings, cousins and I loved our grandmother’s mazarin cake. It was a crazy green from the food colouring and probably tasted more artificial than I would appreciate today. I discussed recently with one of my cousins whether we should try making it again, and we agreed just to let that cake remain a happy memory. Here is the recipe for the mazarin cakes I bake today.

Ingredients

250g marzipan, grated
250g caster sugar
250g soft butter
2 tablespoons soft butter, plus extra for greasing
5 eggs
70g plain flour, plus 1/2 tablespoon
blueberries, raspberries, redcurrants and edible flowers, to decorate

For the frosting

Quantity Ingredient
1 vanilla pod
200ml full-fat creme fraiche
2 tablespoons icing sugar

Method

  1. Preheat the oven to 190°C.
  2. Beat the grated marzipan with the sugar in a mixing bowl (you get the best result using an electric mixer), then add the butter and beat again until smooth. Add the eggs one at a time, beating between additions, until the mixture is even and smooth, then fold in the flour. Transfer the mixture to a piping bag and pipe into silicone mini-muffin moulds, about 3cm in diameter (just use a spoon if you don’t have a piping bag), filling the moulds to just below the rim. Now bake in the oven for 10 minutes then remove and leave to cool in the silicon moulds.
  3. For the frosting, split the vanilla pod (bean) in half lengthways and scrape out the seeds using the tip of a knife. Put the crème fraîche in a mixing bowl, add the vanilla seeds and whisk until stiff, using an electric mixer or stand mixer. Stir in the icing (confectioners’) sugar and transfer to a clean piping bag (if you have one, or you can use a spoon) and refrigerate until ready to use.
  4. When the mazarins have cooled, take them out of the moulds, pipe a small dollop of frosting onto each, then decorate with the berries and edible flowers.
