Life without cakes would be a bit too sinister. I believe cake is good for you mentally; the pleasure you get from something sweet contributes to your quality of life in a way that I don’t think should be disregarded. I don’t believe that a piece of cake made from good, organic produce could possibly be bad for you. I do not eat cake every day, but I do often, and I choose my cakes with care. I prefer my own baked ones, or just home-baked cakes in general. I love something a bit fresh and sour, and I like to use rhubarb and berries. Fresh ripe fruit is a favourite of mine for pudding, but can be difficult here in the north, so when berries are in season in July and August, I eat them every day. I have strawberries almost every day with cold milk poured over.
For me cakes are also quite seasonal. I like to eat Rosenbrød, a Danish pastry with rose icing, in the summer, whereas Buttermilk Fromage (a little like panna cotta) I can eat all year round, just changing the fruit served on top to match the season. Buttermilk Soup, however, I would never eat outside the summer months.
In winter, I enjoy cakes made with apples or plums, and Kringle (like a Danish pastry, but the dough isn't laminated), or cakes made with dried fruits. I also love Pecan Pie with a Rye Crust, which is quite sweet but has an edge to it. For me there is always an occasion to bake a cake and share it with my loved ones.
