I spend a lot of hours in my kitchen; it’s an important room in my house, where many things are always going on. There will be a sourdough that needs attention, bread rising, something fermenting, books and magazines to look through. My kitchen is where I work, hang out, drink my morning tea. First and foremost it’s where we cook dinner, and we sit and share our meals. Evening meals are rarely skipped in my household.

I step into my kitchen and always clear up a little and take stock while I drink my tea, then I put on my apron, as I hate cooking without one. I then place my big wooden chopping board in the middle of my 16ft-long kitchen table. I get my knives out, a bowl for my vegetable scraps, and a wet cloth for keeping my work station clean. Often I do not know what I am going to cook. I open the refrigerator and see what’s hiding, and then I start taking things out and planning what dinner will be like. Then, of course, I sometimes realize I need to write it all down; this could turn out to be a recipe. Lots of times I end up with various stir-fried or steamed vegetables, some boiled rice or grains, and a salad, good bread and olive oil. Velbekomme.
