The morel season is so short that I just think we should get to eat them once or twice every spring. They have an earthy, nutty flavour and, if you close your eyes, you can let the flavour transport you out into the hardwood forest and connect you to nature, inviting you to run through the spring leafing and damp soil, then let go of winter and experience how all new life is sprouting.

Ingredients

Quantity Ingredient
400g morels
25g butter
2 garlic cloves, chopped
50ml port
100ml double cream
sea salt
freshly ground black pepper

To serve

Quantity Ingredient
2 slices sourdough bread, toasted
handful chervil

Method

  1. Inspect the morels for dirt and debris, cleaning them off with a dry pastry brush. Trim them and cut each in half, then sauté in the butter with the garlic for about 5 minutes or until they start colouring.
  2. Add the port and let it simmer for a little, then add the cream and let it simmer again for a few minutes. Season to taste with salt and pepper. Serve right away on toasted sourdough and sprinkled with chervil.
