A fresh and spicy salad using the first of the season’s ramps (wild garlic leaves). If possible, go and pick them yourself in the forest, then they taste even better and fresher.

Ingredients

Quantity Ingredient
2 cucumber
4 carrot
10 ramp leaves

For the dressing

Quantity Ingredient
8 tablespoons greek yogurt
3 tablespoons full-fat creme fraiche
3 tablespoons freshly grated horseradish
sea salt
freshly ground black pepper

Method

  1. Cut the cucumber into sticks. Peel the carrots and cut into sticks and place both in a mixing bowl. Chop the ramp (wild garlic).
  2. Mix together the dressing ingredients, with salt and pepper to taste, then fold the dressing into the vegetables and chopped ramps. Season to taste with salt and pepper and serve with the lamb and potato salad above.
