Chicory is always part of the Christmas dinner, in Denmark we actually called it ‘Julesalat’ or ‘Christmas salad’. The bitter taste is a very suitable foil to all the other dishes. I also make a simple version with chicory, walnuts and grapes and a bit of walnut oil.

Ingredients

Quantity Ingredient
6 heads chicory
1 teaspoon salted butter
20 dates, stoned and chopped into strips
3 organic oranges, segmented
1 organic oranges, finely grated zest
2 sprigs parsley, leaves
salt
freshly ground black pepper

Method

  1. Cut each head of chicory into four long wedges. Melt the butter in a frying pan, add the chicory wedges and fry them on all sides, then place them in a serving dish. Fry the dates in the same frying pan for a few minutes, until they start to brown.
  2. Arrange the dates, orange segments, orange zest and parsley over the chicory and sprinkle with salt and pepper. Squeeze any juice that remains in the orange shells over the salad, then serve.
