I serve this with roast chicken or pork during the winter months. It is perfect eaten with slices of crisp pork belly, and is just a lovely thing to have in the cupboard to spice up any meal.

Ingredients

Quantity Ingredient
1.5kg cox’s orange pippin apples
4 green chillies, finely chopped
200g sultanas
1 cinnamon stick
100ml cider vinegar
300g demerara sugar

Method

  1. Rinse the apples, cut out the cores and cut the flesh into small cubes (keep the skins on). Place them in a heavy-based saucepan with the chillies, sultanas, cinnamon and vinegar. Bring to a boil, then add the sugar and stir until it dissolves.
  2. Let the chutney simmer, uncovered, until it has become as thick as jam. Stir very often, as it can easily catch and burn on the pan. Pour into sterilised jars and seal. Stored in a dark, cool place, this will keep for months.
