Baked omelette with spinach

You’ve got to have eggs for brunch, and here they are baked with winter spinach. Serve, in wedges, with fried bacon on the side.

Ingredients

Quantity Ingredient
800g fresh spinach
12 organic eggs
50ml single cream
1/2 teaspoon freshly grated nutmeg
salt
freshly ground black pepper
1 tablespoon olive oil

Method

  1. Preheat the oven to 175°C.
  2. Rinse the spinach in plenty of cold water, then leave to drain in a colander. Put into a saucepan over a high heat and cover. Steam for two minutes, then drain through a colander and squeeze the leaves to remove as much water as possible.
  3. Beat the eggs well, add the cream, nutmeg, salt and pepper and beat again.
  4. Oil an ovenproof dish with the olive oil. Place the spinach in the dish, then pour over the egg mixture. Bake in the oven for about 30 minutes, or until set and quite firm (check by piercing with a knife). Cut into squares or wedges to serve.
