If you can’t find lingonberries, use cranberries instead.

Ingredients

Quantity Ingredient
2kg lingonberries, fresh or frozen
4 cardamom pods
700g caster sugar

Method

  1. Place the berries and cardamom in a large pan, add 1.2 litres of water and bring to a boil. Reduce the heat, cover and simmer for 30 minutes. Pour into a jelly bag and drain over a large bowl (don’t squeeze the bag or the cordial will be cloudy). Pour the liquid into a clean pan and return to a boil. Add the sugar and boil until it dissolves, skimming any scum. Pour into sterilised bottles and store in a dark, cool place.
