Add a drop of this to a champagne flute and top up with bubbly.

Ingredients

Quantity Ingredient
40 elderflower clusters
3 unwaxed lemons, sliced
60g citric acid
1.5kg caster sugar

Method

  1. Put the flowers, lemons and citric acid into a very large heatproof bowl. Combine the sugar and 2 litres of water in a saucepan and bring to a boil, stirring until the sugar dissolves. Pour it over the flowers, cover with a tea towel and leave for four days.
  2. Strain the mixture, pour into sterilised bottles and seal. Store in a cool, dark place.
