Fun to make and easy for children to help with. These are part of everyday life in December, and are served everywhere. Don’t leave the jar overnight where there is a light on, or the ‘nisser’ (elves) will come and steal them! The name of these comes from the spices used; there is no pepper in them.

Ingredients

Quantity Ingredient
375g plain flour, plus more to dust
1/2 teaspoon baking powder
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground ginger
2 teaspoons ground cinnamon
175g salted butter
180g dark brown soft sugar
1 egg, beaten

Method

  1. Sift together the flour, baking powder and spices. Melt the butter and stir it into the flour mixture. Add the sugar and egg and knead the dough on a floured work surface until smooth. Leave to rest for one hour at room temperature.
  2. Preheat the oven to 180°C. Form the dough into thin sausages. Cut into small pieces, then roll each into a ball. Place them, each a little apart from the next, on a baking tray lined with baking parchment. (You will need to bake in batches.) Bake for 10 minutes, then cool on a wire rack. Store in an airtight tin for up to four weeks.
