My newest cookie recipe and so easy to make. My son really loves these, so they will be part of my Christmas tradition from now on! Rye or spelt flakes work really well in place of the oats.

Ingredients

Quantity Ingredient
150g salted butter
125g jumbo rolled oats or rye or spelt flakes
250g caster sugar
2 eggs, beaten
2 tablespoons plain flour, sifted
2 teaspoons baking powder
2 teaspoons finely grated organic orange zest
pinch salt

Method

  1. Preheat the oven to 180°C. Melt the butter and mix it with the rolled oats or rye or spelt flakes in a bowl. Add the sugar and eggs. In another bowl, mix the flour, baking powder, orange zest and salt. Stir this into the oat mixture.
  2. Use two teaspoons to drop small mounds of the mixture on to a baking tray lined with baking parchment, spacing them out well. (You may need to bake in batches.)
  3. Bake in the oven for about 10 minutes, then leave to cool a little before transferring to a wire rack. Cool and store in an airtight tin for up to three weeks.
