You can buy elderflower cordial everywhere, and loads of people make it… so why not elderberry? It’s delicious.

Ingredients

Quantity Ingredient
1kg elderberries, rinsed, coarse stems removed
3 bramley apples, quartered
500g caster sugar

Method

  1. Put the berries and apples in a pan, add 500ml of water, bring to a boil, then simmer until the berries burst. Line a nylon sieve with muslin and pour the mixture through into a bowl. Pour the juice into a clean pan and bring to a boil, add the sugar and boil for two to three minutes. Skim the surface. Pour into sterilised bottles. Store in a dark, cool place for up to six months. When opened, keep in the refrigerator.
