The ‘nisse’ (elf) lives where we can’t see him. He is naughty, and the best way to stay friends with him is to leave porridge in the attic for him, with lots of butter, sugar and cinnamon! Then, he won’t eat your cookies, or hide your favourite things; instead he will leave little presents in your boots.

Ingredients

For the porridge

500g short-grain pudding rice
2 litres whole milk
2 teaspoons salt

To serve

100g caster sugar
2 tablespoons ground cinnamon
50g salted butter

Method

  1. Pour 500ml of water into a heavy-based saucepan and bring to a boil. Add the rice and let it boil for two minutes, stirring. Add the milk and return to a boil, still stirring. Cover, reduce the heat to low and simmer for 45 minutes, stirring occasionally. Remove from the heat and add the salt. Mix the sugar and cinnamon in a small bowl. Serve the porridge in warm dishes. Make a dent with a spoon in the middle of each and add a spoonful of butter. Sprinkle generously with the cinnamon sugar.
