Who knew that chickpeas, when roasted in a little bit of olive oil, turn into crisp balls which shatter like your favourite party mix? If you did – well done. If not, do try these. They’re simple to make and the perfect thing to lay out with a stiff drink at the end of a long day. I like them with a bit of a spicy kick but if you prefer a milder flavour, omit the cayenne and perhaps add some ground cinnamon or ginger for a more romantic lilt. The best thing about these is that I bet all the ingredients are in your cupboard, most of the time. So if you get stuck having people over and need something nifty to serve, a novel thing to pick at is only 30 minutes away.

Ingredients

1 x 400g tin of chickpeas, rinsed and dried thoroughly
3 tablespoons olive oil
1/2-1 tablespoon ground cayenne pepper
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon sea salt

Method

  1. Preheat the oven to 190˚C.
  2. Scatter the chickpeas over the lined baking tray in a single layer.
  3. Mix together the olive oil, cayenne, cumin and coriander in a small bowl, then scatter it over the chickpeas. Stir to coat them well.
  4. Bake the chickpeas in the preheated oven for about 20 minutes.
  5. Shake the tray a little to move the chickpeas around and allow all the surfaces to get some heat from the oven. Return the tray to the oven for another 15 minutes until the chickpeas are crispy.
  6. Remove the tray from the oven, sprinkle the chickpeas with the salt and leave them to cool before eating or storing them in an airtight container.
