Grilled marinated tempeh on sweet and sour cabbage

The ever-versatile tempeh is perfect partnered with cabbage. I often eat this dish between two fat slices of toasted sourdough bread, but it’s also excellent served with steamed millet or buckwheat.

Ingredients

1 teaspoon ground cumin
1 garlic clove, crushed
1 cm knob ginger, finely chopped
2 tablespoons white miso
1 teaspoon mirin
1 teaspoon lemon zest, finely grated
300g tempeh, cut into 2 cm cubes
metal or wooden skewers
1 tablespoon extra virgin olive oil
1/2 red onion, finely sliced
250g red cabbage, finely shredded
sea salt
3 tablespoons orange juice
3 tablespoons balsamic vinegar
2 tablespoons rice syrup
50g roasted pine nuts
1 teaspoon orange zest, finely grated
1 tablespoon flat-leaf parsley leaves, roughly chopped

Method

  1. To make the marinade, put the cumin, garlic, ginger, white miso, mirin and lemon zest in a bowl and stir well to combine. Add the tempeh, toss to coat, and marinate in the fridge for at least 2 hours.
  2. If you are using wooden skewers, soak them in water for about 1 hour to prevent them from burning during cooking. Preheat a grill or barbecue grill plate to high.
  3. To prepare the sweet and sour cabbage, heat the oil in a heavy-based frying pan over medium heat and sauté the onion for 3 minutes, or until softened. Add the cabbage and a pinch of sea salt and sauté for 3–4 minutes, or until the cabbage wilts. Pour in the orange juice, balsamic vinegar and rice syrup and stir to combine. Cover, reduce the heat to low and simmer for 7 minutes, or until the cabbage softens. Just before serving, stir through the pine nuts, orange zest and parsley.
  4. Meanwhile, thread the marinated tempeh cubes onto the skewers. Place the skewers onto an oiled tray or brush the barbecue plate with oil. Broil or barbecue for 7–8 minutes, until browned lightly on all sides and the centre is warm. Serve over the warm sweet and sour cabbage.
