This green, garlicky lemon dressing is great as a marinade for beans and pasta salads. Its creaminess is perfect with steamed asparagus or green beans. Refrigerate for up to three days.

Ingredients

Quantity Ingredient
1/3 cup extra virgin olive oil
3 tablespoons lemon juice
1 tablespoon brown rice vinegar
1 garlic clove, crushed
1 teaspoon dijon mustard
1/2 cup flat-leaf parsley, roughly chopped
1 lemon, finely zested
1/4 teaspoon sea salt

Method

  1. Put all of the ingredients into a food processor and process until smooth and creamy.
