Polenta takes practice. I sometimes add chopped onion while it’s cooking and stir in a couple of tablespoons of chopped parsley just before serving it as a side dish. The leftovers can be set in a baking tray to be grilled later. Work with the consistency: if it’s a little thick add more water; if it’s too thin, stir in some more polenta.

Ingredients

2 teaspoons sea salt
1 cup coarse polenta
1 tablespoon extra virgin olive oil

Method

  1. Bring 3 cups water and the sea salt to the boil in a heavy-based saucepan over high heat. Whisk in the polenta, being careful not to be splashed. Reduce the heat to low, cover with a lid and simmer for 30–40 minutes, stirring occasionally, or until the polenta comes off the sides easily.
  2. Stir in the oil and serve warm. Alternatively, set in an oiled dish until cold then cut into slices and grill or fry.
