Pickling is so easy and a brilliant way to preserve any stray vegetables, or even fish! Squid is so tender when pickled like this, plus it’s fun to cook.

For the salad

Ingredients

Quantity Ingredient
1 quantity Pickled radishes
300g squid, prepared weight
1/4 cucumber, cut into batons or sticks
few sprigs coriander, stalks finely chopped, leaves roughly chopped

For the dressing

Quantity Ingredient
1 tablespoon fish sauce
2 tablespoons soy sauce
1 teaspoon raw local honey
1/2 lime, juiced

Method

  1. Drain the pickling liquor from the radishes and bring it to the boil in a small pan. In batches, drop the prepared squid into the boiling liquor for 45 seconds only. Remove with a slotted spoon and allow to cool.
  2. Cut the pickled radishes in half from top to tail. Mix all the ingredients for the dressing together.
  3. Mix the squid, radishes and cucumber with the coriander. Toss with the dressing, season and serve.

Storage

  • The pickled radishes will last for two weeks in a sterilised jar. The pickled squid will keep for one week in the fridge, submerged in the pickling liquor. Make the salad just before eating.

Cook natural

  • It’s important to know how to sterilise containers, so you can make the most of your seasonal gluts by preserving them. Choose jam jars with tight-fitting lids and give them a really good clean with hot soapy water. Put them in the oven upside down so they can dry. Turn the oven on to 150°C. When it reaches temperature, turn the oven off. Meanwhile, sterilise the lids (or rubber seals, if using Kilner jars) by boiling them in a saucepan for five minutes. Leave the jars in the oven and the lids in the boiling water until you are ready to use them. Then fill warm jars with the hot preserves, dry the lids with a clean cloth and fix them on tightly.
