Mixed salad with sweet onion and ginger dressing

In Japan, this dressing (or minor variations thereof) is called wafu dressing – literally, ‘Japanese style’. It’s an absolutely lovely, moreish and, most importantly, easy dressing to Japanify any kind of everyday salad you typically enjoy.

Not at all difficult

Ingredients

Quantity Ingredient

Sweet onion and ginger dressing

Quantity Ingredient
1/4 onion
1cm piece of fresh ginger, peeled
100ml soy sauce
4 tablespoons vegetable oil
4 tablespoons rice vinegar
25g caster (superfine) or granulated (raw) sugar
pinch freshly ground black pepper

Mixed salad

Quantity Ingredient
200g mixed leaves, see note
2 tomatoes, cut into 8 wedges
or a handful cherry tomatoes, halved
1/2 cucumber, sliced on the bias
handful radishes, (bell) peppers, avocados, or whatever else you like to put in your mouth/salad
pinch toasted sesame seeds, to garnish

Method

  1. Finely grate the onion and ginger, then combine with all the other dressing ingredients. Stir until the sugar dissolves. Alternatively, bung everything in a food processor and whizz it up until the onion and ginger are broken down.
  2. Toss the leaves with some of the dressing, then arrange the tomatoes, cucumber and extra veg artfully around the leaves (remember: artfully). Spoon over a little more of the dressing and garnish with sesame seeds.

Note

  • The dressing is sweet, so I like this with salad that has a hint of bitterness, like watercress, rocket (arugula), radicchio, endive or just good ol’ lettuce
