Spiced orange pork tenderloin with wellbeing power salad

Ingredients

Quantity Ingredient
2 oranges, juiced
1 teaspoon harissa paste, (see note)
2 garlic cloves, crushed
2 tablespoons parsley, chopped
500g pork fillet
Wellbeing power salad, to serve

Method

  1. Combine all the ingredients except the salad. Allow the pork to marinate for 1 hour.
  2. Preheat oven to 180ºC.
  3. Heat a large ridged grill pan until hot and sear the pork fillet on all sides. Bake in oven for 10 minutes or until cooked through. Let rest for 5 minutes before cutting into slices and serving with wellbeing power salad.

Note

  • Harissa is a type of chilli paste that can be bought from Middle Eastern food stores and some supermarkets.
