Never associate simplicity with lack of taste or flavour. I could eat bowls of rice cooked like this. Just two extra ingredients add so much flavour.

Ingredients

Quantity Ingredient
350g Cooking rice
100g butter
4 tablespoons coriander leaves, finely chopped

Method

  1. Add in the butter, mix well and season with salt and pepper.
  2. Scatter with the coriander and mix well.

Optional extras:

  • If you’re not a fan of coriander, which I know many aren’t, then use flat-leaf parsley instead.

Serving suggestions:

  • Serve with a delicious curry or even a casserole.

Leftovers:

  • It is dangerous to reheat rice, so make sure you use it all up.
