African brown rice

I have been lucky to visit Portugal quite often. They cook so beautifully and it’s interesting learning about and tasting foreign food. There’s always something I pick up that I then cook back at home. This is a very simple rice dish from a superb restaurant called Dos Passos in the Algarve. I spent a morning in their kitchen and was taught how they make it.

Ingredients

Quantity Ingredient
300g basmati rice
2 tablespoons vegetable oil
1 onion, peeled and chopped finely
4 garlic cloves, peeled and chopped finely
200g bacon lardons
4 tablespoons soy sauce
3 tablespoons currants
or 3 tablespoons raisins

Method

  1. Cook the rice, but only boil it for 4–5 minutes as you want the rice still to have a good bit of bite.
  2. Drain the rice, run it under cold water for 2 minutes and set aside.
  3. Heat the oil in a large saucepan and add the onion and garlic. Cook on a medium-low heat for 15 minutes until they are very soft.
  4. Up the heat and add the bacon. After a minute reduce the heat back to medium-low and cook for 10 minutes.
  5. Tip in the rice and stir well, mixing everything together. Then add the soy sauce and stir well. The rice will turn light brown.
  6. Cook on a medium heat for 15 minutes, as you want the saltiness of the soy to evaporate.
  7. At the end, throw in the currants or raisins and serve.

Optional extras:

  • I wouldn’t add anything extra here, as this is how the Portuguese do it and it’s the best.

Serving suggestions:

  • Serve with something simple like some grilled chicken or fish. It’s very rich, so you wouldn’t want it with anything too strong.

Leftovers:

  • Rice shouldn’t be reheated, so keep eating.
