This cake is perfect tea break material when you’ve got lots of work. Reward yourself with a slice of delicious banana bread and a cup of tea.

Ingredients

Quantity Ingredient
75g butter
175g caster sugar
450g bananas, peeled
2 medium eggs
200g self raising flour
1/4 teaspoon bicarbonate of soda
1/2 teaspoon salt

Method

  1. Preheat the oven to 180°C. Grease a 900 g loaf tin with butter, then line it with a sheet of greaseproof paper.
  2. In a bowl beat together the butter and sugar. Chop the bananas and mash them into the mixture. Add the eggs and combine well.
  3. Mix the flour, bicarbonate of soda and salt together in a bowl.
  4. Sieve the flour mixture into the banana and butter mixture and mix well until evenly combined.
  5. Pour into the loaf tin and put it in the oven for 25 minutes until risen and golden brown.

Optional extras:

  • Walnuts are delicious. Add them at the same time as the bananas, but make sure no one eating it suffers from a nut allergy.

Serving suggestions:

  • Eat warm, perhaps spread with a little bit of butter.

Leftovers:

  • This will keep in an airtight container for 3 days.
