This is my favourite pizza topping. I adore anchovies but I know that a lot of my mates find that weird, so I have left them out, but if you are like me and love them, add 2–3 anchovy fillets to the topping.

Ingredients

Quantity Ingredient
4 pizza bases
8 tablespoons Basic tomato sauce for pizza
250g mushrooms, sliced
250g ham, sliced
350g mozzarella, sliced thinly
500g cheddar cheese, grated
4 teaspoons dried oregano, (optional)

Method

  1. Preheat the oven to 200°C. Put the pizza bases on baking trays and spread each one with 2 tablespoons of the sauce.
  2. Arrange the mushrooms, ham, mozzarella and Cheddar. Scatter with dried oregano, if you’re using it.
  3. Put them in the hot oven for 15–20 minutes until golden brown and bubbling.

Optional extras:

  • Anchovies are perfect with this, as are black olives. You could use Parma or Serrano ham instead of the ordinary ham; however they will be more expensive.

Serving suggestions:

  • Delicious with a drizzle of chilli oil over the top. Make your own by pouring olive oil into a jar with 3–4 sliced red chillies. Leave it for up to a month to mature. Great also with a handful of rocket leaves over the top.
