Any barbecue would be incomplete without barbecued chicken. This marinade gives the meat a delicious sweet-savoury edge that tastes amazing with the smoky flavours from the barbecue.

Ingredients

Quantity Ingredient
10 chicken thighs, drumsticks or wings
3 tablespoons runny honey
3 tablespoons mustard

Method

  1. Place all the chicken pieces in a large dish.
  2. Smother with honey and mustard.
  3. Use your hands to rub the mixture all over the chicken.
  4. When your barbecue is hot, put the chicken on it, turning every 3 minutes. Cook for about 10 minutes until they are crispy, golden brown and cooked through. To check that they are thoroughly cooked, cut one open – there should be no sign of pink flesh, just white chicken meat.

Note:

  • If you’re making this in advance, which is always great whenever you marinate something, put it in the fridge for 30 minutes. Or even better, make it in the morning and keep it in the fridge all day so the flavours of the honey and mustard have more time to soak into the meat.

Optional extras:

  • To spice up the marinade a little, add some hot chilli sauce, or even a finely chopped red or green chilli. Herbs such as rosemary, chopped finely and rubbed onto the chicken, would also be delicious.

Serving suggestion:

  • Staple barbecue sauces of course: ketchup, mayonnaise, barbecue sauce. Serve along with other barbecue classics, such as sausages, burgers and salad.
