My old friend Jim and I met when we were 17. He always begged for a full fry-up after a night out; I went on to realise this was a standard lad’s request after a night out. A full fry-up is one of the toughest meals to create perfectly, but the secret is a warm oven. It’s the timing that can get you in a tizz, but if one thing is ready before the rest, just put it in the oven to keep warm while the rest cooks.

Ingredients

1 tablespoon vegetable oil
2 sausages
2 rashers bacon
75g mushrooms, sliced
1 tomato, halved
pinch sugar
1 teaspoon butter
1 egg
slice bread

Method

  1. Preheat the oven to 140°C. Pour the oil into a frying pan and when it’s hot and smoking, add the sausages. Fry them for 7–8 minutes, turning occasionally.
  2. Add the bacon and cook for another 2 minutes.
  3. Next add the mushrooms and tomato halves, flesh side down.
  4. Keep turning the sausages, bacon and mushrooms.
  5. Flip the tomatoes and season them with a pinch of sugar, and some salt and pepper.
  6. After 5–6 minutes the mushrooms should be nice and golden, and the meat cooked. The tomatoes will be soft and cooked right through.
  7. Transfer everything to a plate and put it in the oven to keep warm while you fry the eggs.
  8. Melt the butter in the frying pan, then tip in the egg. Do this gently so you keep the yolk whole. After 2–3 minutes the egg should become white around the edges.
  9. Sprinkle with a little salt and pepper and, 1 minute later, use a spatula to lift it out of the pan.
  10. Toast the bread and serve with the rest of the fry-up.

Optional extras:

  • Black or white pudding: fry these for 2–3 minutes in the same pan as the sausages if you’re keen. A poached egg, a scrambled egg or even a boiled egg can take the place of the fried egg. Fried bread is bread fried in oil and could be tasty. Also if you have any mashed potato lying around, that can taste good fried and served as part of a big brunch.

Serving suggestions:

  • Serve with a slice of toast and a good cup of tea.

Leftovers:

  • If you have leftover sausages you can warm them up in a pan or in the oven for 10 minutes. Eat them with mashed potato, or in a sandwich or just cold as a snack for lunch. Leftover sausages and bacon will keep in the fridge for 3 days. Fried mushrooms will also keep in the fridge for 2–3 days and can be warmed up in a saucepan on a low heat and served with pasta or alongside a chicken dish.
