In considerable contrast to a full fry-up, this is nutritious and so easy to put together with really any fruit you might have lying around. If you make a big fruit salad at the start of the week, and keep it covered in the fridge, it’s perfect to tuck into for brekkie or even after dinner. It could also be great taken into uni as a snack. It’s totally up to you what fruit you use, but make sure that most of it is ripe otherwise it will not taste as good and will be tough to peel and chop. Be aware, however, that bananas tend to go brown and mushy.

Ingredients

Quantity Ingredient
1 ripe melon, quartered, peeled, deseeded and cut into chunks
1 pineapple, cut into chunks
or equivalent amount canned pineapple, drained
2 kiwis, peeled and chopped
2 apples, peeled, cored and chopped
2 pears, peeled, deseeded and chopped
2 tablespoons blueberries
2 tablespoons raspberries
200ml orange juice

Method

  1. Combine the melon and pineapple, kiwis, apples and pears in a large bowl.
  2. Carefully add the blueberries and raspberries.
  3. Pour in the orange juice
  4. Mix carefully and keep in the fridge until needed.

Optional extras:

  • If there’s any fruit you want to add or take out then go for it. The orange juice keeps it fresh. A couple of mint leaves and a sprinkle of sugar could always be added.

Serving suggestions:

  • For breakfast I love fruit salad on some yoghurt or even on cereal. As a pudding it’s sensational and very light, perfect with some vanilla ice cream or even some softly whipped cream, and you could even stir through some chopped mint too.

Leftovers:

  • This will keep in the fridge for 4–5 days if tightly covered, although it depends on what fruit you use; for example, bananas do not keep for long at all.
