This is basically a Mexican wrap made with beef, lots of sauces and some cheese. Serve them hot with some delicious Mexican beer and your evening will be made!

Ingredients

Quantity Ingredient
1 tablespoon vegetable oil
2 garlic cloves, peeled and crushed
4 thin frying steaks, sliced
4 flour tortillas
4 tablespoons Mexican spicy tomato salsa
4 tablespoons soured cream
4 tablespoons Guacamole
4 handfuls iceberg lettuce, shredded
250g cheddar cheese, grated

Method

  1. Heat the oil in a frying pan, then add the garlic and the steak. Cook over a high heat for 3–4 minutes. When ready it should still be slightly pink in the middle.
  2. Remove from the heat and set aside to rest. Meanwhile assemble your fajitas.
  3. Take one tortilla and spoon over 1 tablespoon of salsa, followed by the same amount of soured cream and guacamole. Add a few steak slices, then sprinkle with a handful of lettuce and some grated cheese.
  4. Roll up the wrap, and repeat to make three more fajitas. Brilliant.

Optional extras:

  • Try this with pan-fried chicken instead of steak. You could add some sliced, deseeded chillies to it too, for a hotter version.

Serving suggestions:

  • Serve this with a selection of other Mexican dishes, such as hot tacos and quesadillas. Wash it down with some Mexican beer, sombreros on your heads and maybe even some Tequila shots to finish.

Leftovers:

  • Not great, so just get eating.
