Fried bread with eggs

Ingredients

Quantity Ingredient
60g ghee
2 Khobz, broken into small pieces
or 2 pitted breads, broken into small pieces
4 eggs, lightly beaten
salt, to season

Method

  1. Heat the ghee in a large frying pan. Add the broken bread pieces and stir over medium heat until the bread is beginning to crisp and lightly brown.
  2. Pour in the eggs. Season with salt and stir over the heat for 2 minutes, as you would for scrambled eggs. When the egg is just set, pile it onto plates and serve hot.
  3. This is a great breakfast dish — scrambled eggs and toast from the one pan!
