Tess Mallos's Story
Tess Mallos has been involved in the food industry for more than half her life, working as a consultant to various food enterprises, conducting cooking programs and writing many highly successful books. She was brought up in a Greek family in Sydney, and has been cooking since childhood. Travel and years of experience meant that by the time she wrote The Complete Middle Eastern Cookbook in 1979 she had become aware of how centuries of history intertwine in the cuisines of the region, with each country’s cooking influencing and being enriched by the others. More than 45 editions of The Complete Middle Eastern Cookbook have been published. International sales exceed 650 000 copies. Tess Mallos was inducted into the (Sydney)magazine Food Hall of Fame in 2009. A beautiful new edition of Complete Middle Eastern was published in 2012. Sadly, Tess also passed away that year.
