Alexandrian spicy sausages

For this dish, you can use any spicy sausages you find available (spicy merguez sausages work well). Again, it is inspired by street carts, which sell the sausages chopped up in sandwiches.

Ingredients

Quantity Ingredient
3 tablespoons olive oil
200g spicy sausages, chopped into chunky slices
2 garlic cloves, chopped
1 fresh hot chilli, sliced
1/2 pepper, cut into strips, any colour or a mixture
1 tomato, quartered, seeds removed and the flesh cut into matchsticks
1/2 onion, chopped
1 1/2 tablespoons tomato paste
2 tablespoons fresh coriander, chopped
2 teaspoons vinegar
1/2 teaspoon ground allspice
salt
freshly ground black pepper

To serve

2 baladi breads
handful rocket
pickles
Tahina sauce

Method

  1. Add the olive oil to a hot pan and sauté the sausages over a medium heat for 5 to 7 minutes until just starting to brown. Add the garlic, chilli, pepper, tomato and onion and cook until the onion softens. Add the tomato paste, coriander, vinegar, allspice and salt and pepper, to taste, and stir for 15 minutes over a low heat until the vegetables are soft and the spicy sausage is nicely browned.
  2. Remove from the heat, slice open the baladi breads and add the sausages into each sandwich. Serve hot with rocket, pickles and tahina sauce.
