Cauliflower soup

It is believed that the cauliflower was introduced to Europe by the Arabs after the fall of the Roman Empire. Egypt boasts very large cauliflowers when in season and while the florets can be used as they are for salads or soups, if you are cooking a large whole cauliflower, incisions in the stem may need to be made. This creamy soup uses the florets and is flavoured with a hint of cumin and allspice.

Ingredients

Quantity Ingredient
50g butter
1/2 onion, chopped
2 garlic cloves, sliced
750g cauliflower, broken into florets
500ml full-cream milk
1 litre vegetable stock
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1 tablespoon cumin seeds
walnut oil, to drizzle
salt
freshly ground black pepper

Method

  1. In a medium-sized pot, heat the butter and sauté the onion over a medium heat until golden. Add the garlic and sauté for 3 to 4 minutes more.
  2. Add the cauliflower and stir for a couple of minutes, then add the milk and stock. Once the liquid comes up to the boil, reduce to a simmer. Season with allspice, cumin and salt and pepper, to taste, and simmer for 20 to 25 minutes.
  3. Blend the ingredients in a food processor until smooth, then return the soup to a clean pan to heat through.
  4. Toast the cumin seeds by placing in a dry frying pan over a medium heat and stirring for a few minutes until they turn golden brown.
  5. Garnish the soup with the toasted cumin seeds and a drizzle of walnut oil.
