Watermelon and salty white cheese are commonly eaten in the heat of summer, when watermelons are at the peak of their season, and the two make a light and refreshing snack. The saltiness of the cheese brings out the sweetness of the watermelon and you either love this combination or you hate it! We have taken this Egyptian tradition, which is shared by other Mediterranean cultures, and created a bright and refreshing summer mezza.

Ingredients

Quantity Ingredient
400g watermelon
250g istanbuli or feta cheese
fresh mint, to garnish
freshly ground black pepper

Method

  1. Cut the watermelon and cheese into large bite-size cubes.
  2. Arrange on a platter, alternating the colours. Garnish with mint leaves and freshly ground black pepper.
