Home-style beef kofta stew

Koftas are delicious little meatballs, which are here made from beef. This hearty home-style meal is served over white rice.

For the kofta

Ingredients

Quantity Ingredient
500g minced beef
1 onion, finely chopped
1 handful fresh parsley, chopped
1 teaspoon ground allspice
salt
freshly ground black pepper

For the tomato sauce

Quantity Ingredient
3 garlic cloves, crushed
2 teaspoons vegetable oil
500g pureed tomato
1/2 teaspoon ground cumin
1 tablespoon sugar
1 cardamom pod
2 bay leaves
1 tablespoon tomato paste
750g potatoes, peeled and cubed
1 pepper, cut into cubes, any colour or a mixture
1/2 onion, cut into cubes
1 handful fresh coriander, chopped
salt
freshly ground black pepper

Method

  1. Preheat the oven to 180°C.
  2. Add the minced beef, onion, parsley, allspice and salt and pepper, to taste, to a mixing bowl and mix together until well combined. Divide the minced beef into about 12 balls the size of golf balls and flatten them slightly.
  3. Place the patties on a small baking tray and cook in the oven for 10 to 15 minutes until browned.
  4. Meanwhile, in a pot, sauté the garlic in the oil until golden, then add the puréed tomato. Add the cumin, sugar, cardamom, bay leaves and tomato paste and bring to the boil. Reduce the heat to a simmer and add the potato, pepper, onion, coriander and salt and pepper to taste and simmer, uncovered, for about 20 to 25 minutes.
  5. Add the cooked kofta to the sauce and continue to cook for another 10 minutes.
  6. Serve hot on top of rice.
