Pearl barley with fruits and nuts

Pearl barley is widely eaten in Egypt as a sweet dessert (ashoura) or with hot milk for breakfast. In this recipe we have taken this whole grain and mixed it with seeds, nuts and dried fruits to create a very wholesome and nutritious breakfast with a hint of sweetness from the brown sugar or honey.

Ingredients

Quantity Ingredient
150g pearl barley
500ml milk
120g brown sugar or honey
30g raisins
30g walnuts, roughly chopped
30g pitted dried dates, roughly chopped
30g almonds
30g pumpkin seeds

Method

  1. Soak the pearl barley in water overnight.
  2. Refresh in cold running water and simmer the barley in fresh water in a small pan for 25 minutes.
  3. Drain the barley and return to the pan, then add the milk and sugar (or honey) and simmer for 15 more minutes until tender. Add the raisins, walnuts, dates, almonds and pumpkin seeds to the pearl barley and serve warm for breakfast.
