There are no bells or whistles here, and deliberately so. Some mornings demand a simple hearty breakfast that requires next to no effort – and this is it. Make the tea, read the papers and let the oven do the cooking: just attend to the roasting tray now and then.

Ingredients

olive oil, for brushing
4 good-quality sausages of your choice
8 chestnut mushrooms
sea salt
freshly ground black pepper
4 smoked back bacon rashers
8 cherry tomatoes
2 slices sourdough bread
2 large eggs

Method

  1. Preheat the oven to 240°C. Lightly brush a 30 x 20 x 5-cm roasting tray with olive oil and place in the oven to heat.
  2. Place the sausages and mushrooms in the hot tray, and shake to lightly coat in the hot oil. Season with salt and pepper and roast for 6 minutes, shaking the tray halfway through.
  3. Reduce the oven temperature to 200°C. Add the bacon, tomatoes and bread slices, then season with more salt and pepper and shake the tray again. Roast for 20 minutes, shaking the tray and turning the bread over halfway through.
  4. Make 2 spaces in the middle of the ingredients and crack in the eggs. Return to the oven for 6 –8 minutes, or until the eggs are done to your liking. Serve immediately.
