Ingredients

Quantity Ingredient
80g pecans, roughly chopped
120g peanuts, roughly chopped
100g sesame seeds
80g chia seeds
80g dried cranberries
30g goji berries
6 tablespoons honey or agave nectar
2 tablespoons almond butter
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
a generous pinch fine sea salt

Method

  1. Line a shallow baking tray 20cm x 20cm or equivalent with foil. In a mixing bowl, combine the nuts and seeds. Add all the remaining ingredients and stir until everything is well combined and evenly distributed. Tip into the prepared tray, press firmly and evenly with the back of a spoon and chill for a couple of hours until set. Remove from the tray and cut into squares. Store in the refrigerator.
